- Serves 6
What you need
- 1 lemon, juice
- 5 tbsp extra virgin olive oil
- 2 tbsp mint leaves
- 3 tbsp basil leaves
- 70g wild rocket
- 9 figs halved
- 3 x 125g balls mozzarella or (or 2x 200g balls burrata), torn
- some balsamic vinegar or glaze to serve
What to do
- Mix the lemon juice and olive oil to make a dressing.
- Season.
- Put the herbs, rocket and halved figs in a bowl then toss with the dressing.
- Arrange the cheese on a large serving plate.
- Scatter the fig salad on top.
- Drizzle lightly with balsamic glaze and serve.
