Fig mozzarella and basil salad

  • Serves 6
 What you need 
  • 1 lemon, juice 
  • 5 tbsp extra virgin olive oil 
  • 2 tbsp mint leaves 
  • 3 tbsp basil leaves 
  • 70g wild rocket 
  • 9 figs halved 
  • 3 x 125g balls mozzarella or (or 2x 200g balls burrata), torn
  • some balsamic vinegar or glaze to serve 
 What to do
  1. Mix the lemon juice and olive oil to make a dressing. 
  2. Season. 
  3. Put the herbs, rocket and halved figs in a bowl then toss with the dressing. 
  4. Arrange the cheese on a large serving plate. 
  5. Scatter the fig salad on top. 
  6. Drizzle lightly with balsamic glaze and serve.
